Our story

Welcome to Ling Ling Thai, Dubbo’s newest fine dining Thai restaurant. We are a small family team of Thai chefs, and foodies who love to eat, love flavour and are determined to bring true, authentic, Thai flavours and dishes to Dubbo so people can experience the rich culture and flavours of Thailand and our hometown, Chiang Mai, without having to travel to Sydney or get on an aeroplane.

We bring farm to table, utilising local suppliers and produce whenever we can. We are determined not to use any frozen products, so wherever possible all our ingredients are fresh and each dish is prepared in true Thai tradition in house and to the highest quality by our Thai chefs. Including all our entrees, like our vegetable spring rolls, money bags and satay chicken skewers.

Traditionally, true Thai cuisine is prepared just before eating, using only the freshest ingredients. It is packed full of flavours and very often a lot of heat from all the chillies. We have toned this down a little for Dubbo, but we are always happy to make it as hot as our customers like it. Thai food is a delicate balance of sour, sweet and salty. Sour from ingredients such as tamarind, lemon and kaffir lime leaves. Sweet from ingredients like palms sugar and coconut milk or cream and salty from the unique blend of special Thai sauces, which is unique to each Thai chef.

More About Us

Another part of our mission has been to create a comfortable, relaxed atmosphere for our customers to unwind and enjoy our recipes, along with a wine, beer, or a cocktail or two. In step with our recipes, we aimed to create a décor that was the best quality, new, modern and a little bit funky. Just like our monkey theme which follows on from our name “Ling Ling” which means “two monkeys” in Thai. Not to take ourselves too seriously, but to focus mainly on making the Best Thai dishes.

One of the most difficult aspects to creating the freshest and best Thai dishes in a rural city like Dubbo, has been to find reliable sources of the freshest and unique ingredients used in true Thai cuisine, such as fresh lime leaves, Thai basil, Thai mint, star anise, fresh coriander amongst others. But perhaps the biggest challenge has been to find a reliable source of the best and freshest seafood which is widely used in Thai cuisine. Thankfully, we have been able to partner with some amazing local family businesses who specialise in bringing these things all the way to Dubbo.

We tried the menus under ‘Ling Ling Thai Special’ and ‘Thai Street Food’ over 2 consecutive days. Our favourites were the Pineapple fried rice and Pad Kra Praow Gai. Love their awesome plating and the variety of options. Definitely going to go back to try other dishes!

Everything we ordered was absolutely delicious! Incredible menu and really friendly staff. Our favourite dishes were the Thai spicy noodle soup, fish cakes and green Thai curry with coconut rice. Will definitely be back on our next trip through Dubbo!
